How would someone be able to tell which of these (or any for that matter) Android apps are snooping and sending information back to a collector in the cloud?
This would be a really great thing to know.

the first place I would check is the permissions. If an app doesn’t need access to your data or contacts or something odd, but says it needs it — a flashlight app for example — that’s a good indicator.

Next, you can look at apps using a lot of data that shouldn’t.

Another option is to download an app that looks for malware or viruses. they aren’t 100% effective, but a scan might find something.

Something you need to understand, though. All apps will collect some data, even if it’s just for analytics purposes.
